Toasted Cheese Bread in a Sandwich Maker

A quick and easy recipe for cheese bread made in a sandwich maker, with feta, graviera and yoghurt. Soft, golden and ready in minutes, it is ideal for breakfast, a snack or a light meal.

Ingredients

Serves: 4

200g self‑raising flour

160g strained yoghurt

120g feta cheese, crumbled

100g graviera or light kasseri, grated

2 eggs

2 tbsp extra virgin olive oil

Salt, black pepper

Tip

You can enrich the dough with olives or oregano.

Method

Step 1

In a bowl, combine the yoghurt, eggs and olive oil and mix well with a fork. Add the feta, graviera, a little salt and freshly ground black pepper.

Step 2

Add the flour and mix until you have a soft, pliable dough. If needed, add 1–2 tablespoons more flour and leave the dough to rest for 5 minutes while heating the sandwich maker.

Step 3

Divide the dough into 2 or 4 equal portions, depending on the size of the sandwich maker. With oiled hands, shape each piece on baking paper into a round or slightly oval form so it fits easily in the appliance.

Step 4

Place the cheese bread in the sandwich maker with the baking paper. Do not press it down, simply close the lid. Cook for 12–15 minutes and serve.
