Made with just a handful of pantry staples, this quick tomato pasta is ready in about 10 minutes and offers an affordable, satisfying meal with minimal effort.

There are days when cooking feels like a chore, yet the craving for a comforting plate of pasta remains. That's where "lazy pasta" comes in: a simple, budget-friendly recipe built around tomato paste, olive oil and a few basic seasonings.

Its appeal lies in its simplicity. With almost no preparation and ingredients most households already have on hand, the dish delivers a rich tomato flavour without requiring hours in the kitchen. It is an ideal option for busy weeknights, last-minute meals or days when energy is in short supply.

The recipe is also highly adaptable. Grated cheese, olives, tuna, fresh herbs or whatever happens to be in the fridge can easily be added to give the dish a different character each time.

Ingredients (2 servings)

  • 250g pasta of your choice
  • 2 tbsp tomato paste
  • 3 tbsp olive oil
  • 2 garlic cloves, finely chopped (optional)
  • ½ tsp sugar
  • 1 cup pasta cooking water
  • Salt and freshly ground black pepper
  • Grated parmesan or kefalotyri for serving
  • Oregano or fresh basil (optional)

Method

Cook the pasta according to the package instructions, reserving one cup of the cooking water before draining.

Meanwhile, heat the olive oil in a frying pan and sauté the garlic for about 30 seconds. Add the tomato paste and cook for one to two minutes. This step helps reduce the paste's acidity and brings out its flavour.

Add the sugar, pepper and a little of the reserved pasta water, stirring until a smooth, velvety sauce forms.

Toss in the drained pasta and mix well until evenly coated. Serve with grated cheese and a sprinkle of oregano or fresh basil.

Simple, inexpensive and ready in minutes, it's proof that good comfort food doesn't have to be complicated.
