Looking for an easy, hearty dish the whole family will love? Wholewheat spaghetti with tomato, crispy bacon and plenty of parmesan is hard to beat, coming together in well under an hour with ingredients most kitchens already have to hand.

Ingredients (serves 4)

  • 400g wholewheat spaghetti
  • 150g bacon, cut into small pieces
  • 2 tbsp extra virgin olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, finely chopped
  • 400g chopped tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 50g parmesan, grated, plus extra for serving
  • Salt, black pepper

Method

Step 1. Cook the spaghetti in plenty of salted water according to the packet instructions. Reserve a little of the cooking water, then drain.

Step 2. Meanwhile, heat the olive oil in a large frying pan and sauté the bacon for 3 to 4 minutes, until golden. Add the onion and cook for a further 3 minutes, until softened. Add the garlic and stir briefly, then add the tomato paste and sauté for 1 minute. Add the chopped tomatoes and oregano, lower the heat and let the sauce simmer gently for 10 minutes.

Step 3. Add the spaghetti to the pan along with the parmesan and 2 to 3 tablespoons of the reserved pasta water. Toss well until the sauce coats the pasta evenly. Divide between plates and serve with a little extra grated parmesan.

Tip: If your child isn't especially keen on vegetables, try adding a grated carrot to the sauce, sautéed together with the onion. It lends a subtle sweetness, blends beautifully with the tomato and makes the dish more nutritious, all without changing the pasta's familiar flavour.
