Serves: 4
Preparation/Cooking Time: 20 minutes
Suitable for: Vegetarians
Ingredients
- 300g sour trahanas
- 1.5 litres water or vegetable stock
- 160g feta cheese
- 45ml extra virgin olive oil
- Freshly ground black pepper
- A little salt, if needed
Method
Step 1
Pour the water or vegetable stock into a pot and bring to the boil.
Step 2
Gradually add the trahanas, stirring continuously with a wooden spoon or whisk to prevent lumps from forming. Reduce the heat and simmer for 10-15 minutes, stirring frequently, especially towards the end, to stop the trahanas sticking to the bottom of the pot.
Step 3
If the mixture becomes thicker than desired, add a little hot water or stock and stir until it returns to a creamy consistency. Taste and add salt only if necessary.
Step 4
Remove the pot from the heat and add half of the feta, roughly crumbled, along with part of the olive oil. Stir gently until the feta begins to melt.
Step 5
Divide between deep serving bowls and finish with the remaining feta, the rest of the olive oil and freshly ground black pepper.
Step 6
Serve immediately while the trahanas remains hot and creamy.
