Ingredients
- 600 g coarse cornmeal
- 2 cups extra virgin olive oil
- 800 g feta cheese
- 125 ml milk
- 125 ml water
- 350 g courgettes, grated
- 80 g onion, grated
Tips
- In the basic recipe, you can add other ingredients, provided they do not release moisture, such as mushrooms.
- During fasting periods, the milk can be omitted and the feta replaced with desalted cod in small strips, along with some sliced olives.
Method
Step 1
Preheat the oven to 150°C using the fan setting. In a bowl, mix all ingredients together with half of the olive oil.
Step 2
Spread the mixture evenly in a baking tray measuring approximately 30 × 40 cm. Press small indentations with your fingers and drizzle with the remaining olive oil.
Step 3
Bake for about 1 hour, until the surface turns golden and crisp.
