Lazy cheese pie
Ingredients
- 400g feta cheese
- 200g strained yoghurt
- 3 eggs
- 250g self-raising flour
- 100ml milk
- 80ml olive oil
- A pinch of pepper
- Dill or mint (optional)
Method
Preheat the oven to 180°C.
In a large bowl, crumble the feta and add the yoghurt, eggs, milk and olive oil. Mix well until combined.
Add the flour and a little pepper, then continue mixing until you get a thick batter. If desired, add dill or mint.
Pour the mixture into a well-greased baking tray and bake for about 40–45 minutes, until golden on top.
Allow the pie to cool slightly before cutting and serving.
Tips
- For a lighter texture, add 1 tsp baking soda.
- For a richer flavour, combine feta with kasseri or graviera.
- The pie is just as enjoyable cold the next day.
