Serves 2–3
Ingredients
- 150g round green beans
- 2 slices bacon
- Extra virgin olive oil
- ½ tsp curry powder
- 1 pinch ground cumin
- 1 pinch paprika
- 1 medium tomato, grated
- 1 small garlic clove, finely chopped
- 1 tbsp parsley, finely chopped
- Zest of 1 lemon
- 70g feta cheese, crumbled
- Fresh thyme
- Salt and freshly ground black pepper
Method
Step 1
Bring a small pot of water to the boil and add the green beans. Blanch for 6–7 minutes, then drain in a colander.
Step 2
Heat 1 tablespoon of olive oil in a non-stick frying pan over high heat. Sauté the bacon until it begins to turn crispy.
Step 3
Remove the bacon and add the green beans to the pan. Sprinkle with the curry powder, cumin and paprika, season with salt and mix well so the spices are evenly distributed. Sauté over high heat, stirring frequently, for about 2–3 minutes or until the beans begin to caramelise.
Step 4
Meanwhile, in a bowl combine the grated tomato, garlic, parsley, thyme and lemon zest. Season with salt and mix well.
Step 5
Transfer the green beans to a serving plate. Spoon over the tomato mixture, then add the crumbled feta and the bacon cut into small pieces. Drizzle with a little olive oil, finish with freshly ground black pepper and serve.
